Beach Soup

So the most recent recipe I tried was called "Beach Soup" out of Hawai'i's Second Spam Cookbook. In the cookbook, it explains that it's called "Beach Soup" because it's based on a soup a local women's uncle used to make after a day at the beach.

It was super easy and turned out better than I thought it'd be. And we had PLENTY of leftovers too.

Spam Empanadas!

So it's been awhile since I've posted anything...the last recipe i tried from my cookbooks didn't go so well and I got a bit discouraged to try anything for awhile and on top of that, my computer is currently in the process of dying and the new stuff won't be here till the end of the week so I'm posting from my handy dandy iPhone...hopefully this goes well.

Tonight, I made spam empanadas and they came out great. It wasn't difficult, just a lengthy process. I definitely think I'll be making these again though. My husband liked them, to his surprise and our four month old puppy really liked them too, as he stole one off the plate, ran like crazy, and devoured half of it before I could catch him.

Spam Katsu

Well, I went on a crazy kitchen organizing mission today, and didn't think I was gonna feel like cooking anything, but I'd made Chicken Katsu last night and had some left over sauce and some brown rice, so I figured why not make Spam Katsu.  The recipe is in one of the Hawai'i's Spam Cookbooks, but I don't know at the moment if it's in the first or second...This may be one of my new favorite ways to eat spam though.

Spam & Ramen Rice

So tonight's dinner was Spam & Ramen Rice...the recipe was taken from Hawai'i's 2nd Spam Cookbook and while I didn't follow the recipe exactly (I have a horrible problem with following directions...), it came out pretty good.  I used nearly double, maybe even triple, the curry called for in the recipe (I also am terrible about measuring...but I regularly use way more curry than called for in recipes)   Marsh even liked it, and there was more than enough left over.

New Year's Day

Aloha!  I started this blog because well, I'm crazy about the wonderful canned meat called spam.  I received Hawaii's Spam Cookbook and Hawaii's 2nd Spam Cookbook for Christmas, and was obviously very anxious to try out ALL of the recipes, and jokingly said I had enough recipes to make spam every night for an entire year...well, I'm not quite that crazy, but I do plan on making spam often and document my adventures with different spam recipes in this blog.  Tonight will be my first attempt at trying a new recipe and I will be sure to post about it later, but for now here are some pictures from New Year's day's breakfast...gotta love spam, eggs, & rice!
